How should you create new classes?

Say you're creating a game with many different classes. What would you do to make the classes unique and fun to play?

I'm kinda struggling with this, figured I would ask some people.

Why have more classes than you have ideas for? They can have different abilities/speeds/defence/strengths/HP/weapons/playstyle.

This is only a personal preference, but I would focus on a small number (3 to 5) of different character classes and have the primary difference be in terms of playstyle/mechanics between them. That makes it easier to come up with ideas, but also to more completely test and balance the classes against one another.
