Export game for multi-platform?

On Steam, there are many big GameMaker games that have downloads for Windows, Mac and Linux. How is this possible? To my knowledge, when you export a game to Mac, you don't get an executable of that game for Mac version, it just goes right to the Apple store. So how does one make a downloadable game file for Mac, that can be uploaded to Steam, or Gamejolt? It has to be doable if the big games on Steam are doing it.

Well, your knowledge is wrong. No idea where you got that from, except that you might be confusing iOS and Mac exports. Source: exported my game to OS X, published that executable on Steam and itch.io.

gosh it would be so simple if games went directly to the apple store when compiling *_*

But no, you usually get an app file and you have to uplaod it yourself. Each module builds a different app file.
