I have an indie license. When I publish my .exe and then install it onto a computer, is there any way to customize and remove the "created with game maker" wording to just be my game name?

You can edit that in the "Game Options". See your Asset Browser, there's a 3 line icon next to a funnel icon? Press that, then choose Windows for .exe.
